Monte Cristo Pasta

- 400 g cooked fettuccine pasta shopping list
- 1/4 kg chicken breast shopping list
- 1 medium egg, beaten shopping list
- 1 cup flour shopping list
- 1/2 tsp. baking powder shopping list
- 1/4 tsp. each of garlic powder, dried basil, paprika and turmeric shopping list
- salt and pepper to taste shopping list
- 1tbsp. butter shopping list
- 2 cloves garlic, minced shopping list
- 1 small white onion, chopped shopping list
- 1/2 tsp grated ginger shopping list
- 2 large red bell peppers, diced shopping list
- 3/4 cup ham, diced. shopping list
- 3 tbsp. honey shopping list
- 2 tbsp. mango puree shopping list
- 1tsp. Dijon mustard shopping list
- 1/2 cup water shopping list
- 1 cup heavy cream shopping list
- 1tsp. cornstarch dissolved in 1/2 cup cold water shopping list
- 1/3 cup pine nuts, chopped shopping list
- grated Parmesan shopping list
How to make it
- Mix flour,baking powder and spices in a bowl.
- Dip the chicken in the egg, dredge it to the coating, back to the egg and to the coating again. Pan fry.
- Cut chicken into strips. Set aside.
- Melt butter in a saucepan.
- Cook garlic until golden brown.
- Add onion, ginger and bell pepper until onion becomes translucent.
- Add ham.
- Add honey, mango puree, Dijon mustard and water. Simmer until almost half of liquid is reduced.
- Add cream and simmer for a few minutes, just until you see the sides boiling.
- Add cornstarch mixture, stirring constantly. Turn off heat when the sauce is thicker.
- Stir in pasta, chicken and nuts. Top with grated cheese.
