Vegetarian Saffron Rice

- 2 Tb. olive oil shopping list
- 1/2 C grated carrots shopping list
- 3 C vegetable broth ( I like the powdered stuff you just add to water) shopping list
- 2 C. basmati rice shopping list
- 1 1/2 tsp. corriander shopping list
- 1/2 tsp. salt shopping list
- 1/4 tsp. crushed saffron shopping list
- 1/3 C. sliced green onions shopping list
- 1/4 C peas shopping list
- fresh cracked black pepper to taste shopping list
How to make it
- Place wok on medium heat, and cook carrots in oil until tender.
- Add broth and heat to boil. Add the rest of ingredients except peas and green onions, stir it all up really good.
- Reduce heat to low, cover with lid, and cook 15-20 minutes, or until done. (closer to 20 min. for me)
- At the very end, stir in your peas and green onions, Season with pepper. Serve hot.
