Apple Cinnamon Jelly Pie

- For the Crust: shopping list
- 3 cups all-purpose flour shopping list
- 2 cups lard or unsalted butter shopping list
- 1 1/2 cup sugar shopping list
- 1 tsp salt shopping list
- 1/2 cup water shopping list
- For the Filling: shopping list
- 2 Fuji apples (pick the sweetest ones for best results), diced shopping list
- 2 tbsp. cinnamon shopping list
- 1 1/2 cup brown sugar shopping list
- 1 box jelly powder shopping list
How to make it
- Preheat oven into 315 degrees.
- Mix all crust ingredients except water either manual or using a mixer.
- Add water slowly while mixing until all the water is used.
- Knead the dough just to combine the ingredients more.
- Cover the dough with cling wrap and refrigerate the dough for about an hour just to rest it.
- Cut the dough in half and roll it. Transfer into a 10 inch round pie plate and prick the dough using a fork.
- Bake until sides brown, but not too much. Set aside to let cool.
- Put all filling ingredients except jelly in a saucepan until all sugar has caramelized. The apples will release water but don't worry, it's natural.
- Add the jelly powder and bring to another boil.
- Pour filling onto the baked crust. Let cool until the top of the filling solidifies. Don't refrigerate to retain the heat of the jelly.
- Roll the remaining dough and fit on top if the pie. Cut slits in the dough to let air escape.
- Bake until slightly brown.
