Grilled Chicken Salad With Black Beans And Barbecue Ranch Dressing

- 2 cups peeled, seeded, and sliced cucumber (about 2 cucumbers) shopping list

- 1- 15oz can black beans, drained and rinsed well shopping list
- 1/4 cup stemmed, seeded, deveined, and diced red bell pepper shopping list
- 1/4 cup stemmed, seeded, deveined, and diced, orange bell pepper shopping list
- 1/4 cup stemmed, seeded, deveined, and diced yellow bell pepper shopping list
- 1/4 cup diced red onion shopping list
- 1/4 cup chopped fresh Italian flat-leaf parsley shopping list
- 1/4 cup fresh lime juice (about 2 medium limes) shopping list
- 1/4 cup olive oil shopping list
- 1/2 tbs dried oregano shopping list
- 1/2 tbs honey shopping list
- 1/2 tbs ground cumin shopping list
- BARBECUE RANCH DRESSING: shopping list
- 1/3 cup barbecue sauce shopping list
- 1/3 cup mayonnaise shopping list
- 1/3 cup nonfat yogurt shopping list
- 1/3 cup buttermilk shopping list
- 1 tbs white wine vinegar shopping list
- 1/4 tsp garlic powder shopping list
- 1/4 tsp onion powder shopping list
- 1/4 tsp cayenne pepper shopping list
- 1/4 tsp paprika shopping list
- 2 tbs chopped chives shopping list
- 2 tbs fresh Italian flat-leaf parsley shopping list
- SALAD: shopping list
- 4 cups torn romaine lettuce leaves (about 5 oz) shopping list
- 2 medium vine-ripened tomatoes, quartered shopping list
- 1/2 cup thawed frozen corn or fresh cooked corn kernels shopping list
- 2 cups 1-inch piece of warm grilled, rotisserie, or fried chicken shopping list
How to make it
- In a small bowl, toss the cucumber slices in the vinegar, salt, and pepper. Allow these to marinate at room temperature while you prepare the salad.
- To prepare the beans: In a small medium bowl, combine the black beans, peppers, onion, and parsley. In a small bowl, combine the lime juice, olive oil, oregano, honey, and cumin.. Toss the dressing with the bean mixture. Set aside.
- For the barbecue ranch dressing. In a blender, blend the barbecue sauce, mayonnaise, yogurt, buttermilk, vinegar, garlic powder, onion powder, paprika, and cayenne pepper. Pour the dressing into a bowl and fold in the chives and parsley.
- To serve the salad. Arrange the romaine lettuce on each plat. Place the tomato quarters on the side of each plate and sprinkle the greens with corn. To the side of the greens place some of the marinated cucumber. Place a spoonful of the black beans on the center of the greens. Top with warm chicken. Pass the barbecue ranch dressing or drizzle some over the chicken.
