How to make it

  • Preheat oven to 350F, grease 12 mini-muffin cups.
  • Melt butter and chocolate gently in a large bowl.
  • Add sugar and egg replacer and whisk until everything is thoroughly incorporated.
  • In another bowl, whisk together cocoa, mochiko and baking powder.
  • Stir half the dry mixture into the sugar mixture, then add rice mik and vanilla, stirring well.
  • Beat in the remaining dry ingredients until no pockets of dry mix remain.
  • Bake 18 minutes. Cool in the tin for 5 minutes before unmoulding onto a wire rack.

    I am not familiar with the glutinous rice flour... what is the advantage of using that?
