Mochi Two - Biters

- 3 tbsp butter shopping list
- 1/2 oz bittersweet chocolate, chopped shopping list
- 1/3 cup brown sugar shopping list
- 1 egg replacer (such as Ener-G), prepared shopping list
- 1/3 cup Dutch-process cocoa shopping list
- 2.2 oz mochiko (glutinous rice flour) shopping list
- 1/2 tsp baking powder shopping list
- 7 tbsp rice milk shopping list
- 1/2 tsp vanilla shopping list
How to make it
- Preheat oven to 350F, grease 12 mini-muffin cups.
- Melt butter and chocolate gently in a large bowl.
- Add sugar and egg replacer and whisk until everything is thoroughly incorporated.
- In another bowl, whisk together cocoa, mochiko and baking powder.
- Stir half the dry mixture into the sugar mixture, then add rice mik and vanilla, stirring well.
- Beat in the remaining dry ingredients until no pockets of dry mix remain.
- Bake 18 minutes. Cool in the tin for 5 minutes before unmoulding onto a wire rack.
