How to make it

  • To cook rice:
  • Add first 4 ingredients to a rice cooker, and cook as directed for your rice cooker. If you don't have a rice cooker, and first 4 ingredients to a small sauce pan, stir. Bring to a boil over high heat, reduce heat to low, and cover and simmer for 25 minutes, or until water is absorbed.
  • Meanwhile, melt butter in a small fry pan over medium heat, stir in ham seasoning. Add onions to fry pan, and saute for about 2 minutes. Next, add entire can of tomatoes and cover. Continue to cook over medium for about 6 minutes. Remove lid, and stir tomatoes breaking up with a fork. Replace lid and continue to cook until tomato juices reduce (approx. 8 more minutes on medium/low heat) stirring occasionally. Serve tomato "gravy" over the cooked rice.

    I made this for dinner tonight, along with a side of sauted zucchini (sp?) and onions, fried bacon, and bacon gravy, and biscuits to "sop" it all up with! Yummmm

    Wow! My Mom used to do a version of this when we were growing up. She always added a can of shoepeg corn at the end. I had forgotten how good this was. Can assure you I will be cooking this in the next week. Thanks for posting!
