Rice W/sauted Tomato "gravy"

- 1 cup of uncooked long grain rice shopping list
- 2 cups water shopping list
- 1 pkg of ham seasoning (goya) shopping list
- salt and pepper to taste shopping list
- 1 can whole tomatoes shopping list
- 1/4 cup chopped onions shopping list
- 1 pkg of ham seasoning (goya) shopping list
- 1 Tbls butter shopping list
- salt and pepper to taste shopping list
How to make it
- To cook rice:
- Add first 4 ingredients to a rice cooker, and cook as directed for your rice cooker. If you don't have a rice cooker, and first 4 ingredients to a small sauce pan, stir. Bring to a boil over high heat, reduce heat to low, and cover and simmer for 25 minutes, or until water is absorbed.
- Meanwhile, melt butter in a small fry pan over medium heat, stir in ham seasoning. Add onions to fry pan, and saute for about 2 minutes. Next, add entire can of tomatoes and cover. Continue to cook over medium for about 6 minutes. Remove lid, and stir tomatoes breaking up with a fork. Replace lid and continue to cook until tomato juices reduce (approx. 8 more minutes on medium/low heat) stirring occasionally. Serve tomato "gravy" over the cooked rice.
