How to make it

  • Place potato and carrot in cold water, bring to the boil and cook til soft. Drain and set aside.
  • In a separate pan cook rice to serve.
  • Meanwhile, place all spice ingredients into a food processor and blend til smooth. Heat 2 tbspns oil and fry spice mix on low for 5 mins, then add tomato paste and cook for 2 mins.
  • Add pureed tomatoes and cream. Bring to the boil. Add cooked carrot, potato and tofu. SImmer for 10 mins.
  • to finish curry, add butter and half the chopped coriander. Mx remaining coriander through cooked rice.
  • Serve with yoghurt, mango chutney and naan bread.
