Easy Beef Enchiladas

- 1 lb. ground beef {beef/turkey mix} shopping list
- 1 pkg. (about 1 oz.) taco or burrito seasonings {organic mix} shopping list
- 1 can (about 16 oz.) refried beans {fat-free} shopping list
- 1 can (10 3/4 oz.) Campbell's condensed cheddar cheese soup shopping list
- 1 med. onion, chopped (about 1/2 cup) shopping list
- 1 cup cooked regular long-grain white rice {brown rice} (optional) shopping list
- 12 flour tortillas (10-inch), warmed {multi-grain flour} shopping list
- 1 1/2 cups prepared enchilada sauce shopping list
- Shredded cheddar cheese {low-fat} shopping list
- Chopped black olives (optional) shopping list
- {Flax meal} (optional) shopping list
How to make it
- Heat oven to 350 F. Cook the beef and onion in a 10-inch skillet over medium-high heat until well-browned, stirring often to separate meat. Pour off any fat. Stir the seasoning mix, beans, soup, and rice, if desired, in the skillet. {BIG FYI: I add a bit of flax meal to all mixes like this. Nobody notices and it's wicked healthy!}
- Divide the beef mixture among the tortillas. Roll up the tortillas and place them seam-side down into a 3-quart, shallow baking dish snug against each other. Pour the enchilada sauce over the filled tortillas and sprinkle with the cheese. I sprinkle chopped black olives over that.
- Bake for 20 minutes or until the enchiladas are hot and bubbling.
