Mum's Never Fail Sponge Cake

- 1/2 cup cornflour shopping list
- 1/2 cup custard powder shopping list
- 1 tspn cream of tartar shopping list
- 1/2 tspn carb soda shopping list
- 1 tsp plain flour shopping list
- 4 eggs shopping list
- 3/4 cup caster sugar shopping list
How to make it
- Pre-heat oven to a moderate temperature- about 160C
- Beat egg whites until very stiff.
- Gradually add sugar a little at a time. Add egg yolks.
- Fold in the rest of the dry ingredients (which have been sifted 3 times) little by little.
- Divide equally between 2 8 inch tins which have been well greased and floured.
- Bake in a moderate oven for 20mins.
- Turn them out straight away onto a wire rack and leave to cool.
- On the bottom sponge, spread with whatever takes your fancy- whipped cream and strawberries is great, or you could try lemon butter or a nice jam. Top with cream and strawberries/cherries/passionfruit... and then try to cut it! Use a really really sharp knife.
