How to make it

  • Pre-heat oven to a moderate temperature- about 160C
  • Beat egg whites until very stiff.
  • Gradually add sugar a little at a time. Add egg yolks.
  • Fold in the rest of the dry ingredients (which have been sifted 3 times) little by little.
  • Divide equally between 2 8 inch tins which have been well greased and floured.
  • Bake in a moderate oven for 20mins.
  • Turn them out straight away onto a wire rack and leave to cool.
  • On the bottom sponge, spread with whatever takes your fancy- whipped cream and strawberries is great, or you could try lemon butter or a nice jam. Top with cream and strawberries/cherries/passionfruit... and then try to cut it! Use a really really sharp knife.
