How to make it

  • Cook pasta according to package directions, drain, and set aside till you are ready to use.
  • In medium saucepan, saute mushrooms and garlic in butter for 2 minutes over med/low heat(lightly brown, do not burn)
  • Add tomato and spinach and continue to cook for 1 to 2 minutes.
  • Stir in half and half and Parmesan cheese, lower heat to a low simmer and cook for 2 minutes.
  • Season with salt and pepper to taste and fresh basil if desired.
  • Divide pasta between two serving dishes or bowls.
  • Top with sauce and sprinkle with additional Parmesan cheese.

    If you like, you can stretch this by cooking more pasta. The sauce is not thick, so it can go further. For a thicker sauce, stir together 1 1/2 teaspoons flour into the half and half before adding it to the pot.
