Peach Shortcake

- angel food cake (great recipe posted on RecipeZaar) shopping list
- 1 cup cake flour (sift several times) shopping list
- 3/4 cup sugar shopping list
- 2 tbsp sugar shopping list
- 12 large egg whites shopping list
- 1 1/2 tsp cream of tarter (make sure fresh) shopping list
- 1/4 tsp salt shopping list
- 3/4 cup sugar shopping list
- 1 1/2 tsp vanilla shopping list
- 1/2 tsp almond extract shopping list
- Use a two piece anglefood cake pan if possible. Preheat oven to 375. shopping list
- Sift together cake flour and 3/4 cup sugar plus 2 tsp. Set aside. shopping list
- Combine the two extracts in small bowl. Set aside. shopping list
- Beat egg whites, cream of tarter, and salt until peaks form. shopping list
- Add other 3/4 cup sugar slowly, then beat until stiff peaks. shopping list
- Beating on LOW, add flour mixture and extracts slowly. Make sure to fold in bottom and sides of bowl. shopping list
- Add batter to UNGREASED pan. Move knife thru batter to remove air pockets. Bake 30 - 35 minutes until top springs back when touched. shopping list
- Cool completely on rack. Spank outside of pan, do not use knife, to remove cake. shopping list
How to make it
- PEACHES
- 4 medium size peaches
- Fresh blueberries
- 2 tsp Grand Marnier (optional)
- Fine Granulated sugar
- Peel skin from peaches. Remove seed. Cut peaches in small pieces and place in medium bowl. Add Grand Marnier. Add 1/2 cup sugar and stir well. Let sit in fridge for at least 30 minutes. Stir occasionally. Sugar and peaches will create juice the longer they sit. Add a few blueberries for visual effect to taste. Cut blueberries in half if you like.
- WHIPPED CREAM
- 1 cup whipping cream (heavy ok)
- 1 vanilla bean (or 1 tbsp vanilla extract)
- 1/4 cup sugar
- Place cream in jar with lid. Cut vanilla bean in to 1 inch pcs. Slice each pc. lengthwise and remove beans. Add beans and pods to jar. Shake well and place in fridge for one hour.
- Strain cream in to medium size bowl to remove pods and beans. Beat for 1-2 minutes until foamy. Add sugar (and vanilla extract if that is what you are using) and beat on medium speed until peaks form.
- Slice cake, top with fruit and juice, and whipped cream.
