Mediterranean Spinach Casserole

- 1 lb. fresh baby spinach leaves shopping list
- 6 cups boiling water shopping list
- 3 eggs shopping list
- 3/4 cup milk or buttermilk shopping list
- 4 oz. cream cheese, softened shopping list
- 1/2 cup feta cheese crumbles (with herbs or plain) shopping list
- 4 oz. can of sliced mushrooms (or 1 cup of fresh mushrooms, sliced) shopping list
- 2 plum tomatoes, diced shopping list
- salt and pepper to taste shopping list
How to make it
- 1. Preheat oven to 350 deg. F.
- 2. Place rinsed spinach in a microwave safe bowl. Microwave on high for about 45 seconds to "wilt" the spinach.
- 3. In large bowl, whisk the eggs and milk until well blended. Add the softened cream cheese, mixing well. Stir in 1/4 cup feta cheese.
- 4. Pat spinach dry between folds of paper towels. Stir it into cheese mixture, along with mushrooms and tomatoes, salt and pepper.
- 5. Bake covered for 30 minutes, then uncover; continue an additional 15-20 minutes or until center is set.
