Beer And Honey Fruitcake

- ½ cup beer shopping list
- 2 cups chopped dried fruit (sultanas, dates, apricots, mixed peel, glace cherries etc) shopping list
- 80 grams butter (room temperature) shopping list
- 1/3 cup honey shopping list
- 1 egg shopping list
- ½ cup wholemeal self-raising flour shopping list
- ½ cup plain white flour shopping list
- ½ tsp mixed spice shopping list
- 2 Tbsp slivered almonds shopping list
How to make it
- - Combine beer and fruit in a bowl and leave overnight.
- - Preheat oven to 150°C (300F)
- - In a large bowl, beat together butter and honey until light and fluffy.
- - Add egg and beat until just combined.
- - Stir in the fruit mixture.
- - Add combined flours and spice in two lots, then stir in almonds.
- - Spread into a lined loaf pan (or whatever pan you like) and bake for about 3 hours, until a knife inserted comes out clean.
- - Remove from oven, cover tightly with foil and allow to cool completely in the pan.
- Should keep for 1 month.
