How to make it

  • - Combine beer and fruit in a bowl and leave overnight.
  • - Preheat oven to 150°C (300F)
  • - In a large bowl, beat together butter and honey until light and fluffy.
  • - Add egg and beat until just combined.
  • - Stir in the fruit mixture.
  • - Add combined flours and spice in two lots, then stir in almonds.
  • - Spread into a lined loaf pan (or whatever pan you like) and bake for about 3 hours, until a knife inserted comes out clean.
  • - Remove from oven, cover tightly with foil and allow to cool completely in the pan.
  • Should keep for 1 month.
