Green Pawpaw (papaya) Chutney

- 1 large green pawpaw (Papaya) (must be firm) shopping list
- 1 large onion (thinly sliced) shopping list
- 1 tbs crushed ginger shopping list
- 1tbs crushed garlic shopping list
- pinch of salt shopping list
- pinch of pepper shopping list
- 1 large chili (Optional) shopping list
- 3 tbs vegetable oil shopping list
- 2 tbs lemon juice or vinegar shopping list
How to make it
- peel the pawpaw, cut into four pieces, scrape the seeds and clean inside
- wash the pawpaw and grate on a cheese grater
- place the grated pawpaw with the sliced onion in a large bowl
- sprinkle with a table spoon of salt
- allow to stand for about 10 minutes..this is to remove excess water
- now squeeze the pawpaw which would have soften by then
- remove all the water
- the put in a colander and rinse under fresh clean water to remove the excess salt
- then squeeze in a tea cloth or kitchen towel to remove the water
- add the garlic and ginger to the pawpaw
- heat the oil in a large skillet and add pawpaw
- stir fry for a few minutes
- cover and reduce heat. allow to warm up for a few minutes
- add the salt, pepper, chili and lemon
- mix well
- remove from heat and enjoy.....
