Couscous, Chicken And Greens Salad

- 3 cups romaine lettuce shopping list
- 1/2 cup shredded red cabbage shopping list
- 1/2 cup cooked Israeli couscous shopping list
- 3/4 of a cooked skinless chicken breast shopping list
- 3 T corn kernels shopping list
- 1 1/2 T chopped red pepper shopping list
- 1 thinly sliced scallion shopping list
- 1 T dried currants or cranberries shopping list
- 1 T chopped pecans shopping list
- 2 t grated asiago or parmesan cheese shopping list
- 1 T dressing of your choice (suggestions: creamy basil, creamy maple balsamic) shopping list
How to make it
- (makes one serving - about 500 calories)
- Broil/Cook chicken
- Cook couscous
- Put all ingredients in bowl, toss and serve
