Mexican Bean Salad

- 1 (15 oz) can black beans,rinsed and drained shopping list
- 1 (15 0z) can kidney beans,drained shopping list
- 1 (15 oz) can cannellini beans,drained and rinsed shopping list
- 1 green bell pepper,chopped shopping list
- 1 red bell pepper,chopped shopping list
- 1 (10 oz) pkg. frozen corn kernels shopping list
- 1 red onion,chopped shopping list
- 1/2 c red wine vinegar shopping list
- 2 TB fresh lime juice shopping list
- 1 TB lemon juice shopping list
- 2 TB white sugar shopping list
- 1 TB salt shopping list
- 1 clove crushed garlic shopping list
- 1/4 c fresh cilantro,chopped shopping list
- 1/2 TB ground cumin shopping list
- 1/2 TB ground black pepper shopping list
- 1 dash hot sauce shopping list
- 1/2 tsp chili powder shopping list
How to make it
- In large bowl,combine beans,bell peppers,frozen corn and red onion.
- In small bowl,whisk together olive oil,red wine vinegar,lime juice,lemon juicesugar,salt,garlic,cilantro,cumin and black pepper. Season to taste with hot sauce and chili powder
- Pour olive oil dressing over vegetables;mix well. Chill thoroughly and serve cold.
