How to make it

  • Preheat oven to 375
  • Remove thyme from the stems
  • Slice onions into rings (or half rings)
  • Fry bacon in a separate frying pan, then remove the bacon bits and set aside on a paper towel to drain grease off.
  • Melt butter in a large saucepan, add onions, bacon, and thyme, stir over medium heat (less sometimes to avoid burning) until the onions have caramelized into a nice golden brown (20 min)
  • Remove from heat and allow to cool somewhat before adding salt and pepper and Greek yogurt, then stir lightly to blend
  • Unroll your pie crust onto your pie plate
  • Spread filling into pie crust evenly.
  • Turn the long edges of the pie crust inward, on top of the outer edges of the filling forming an "open pie"
  • In a small bowl, whisk the milk and egg, and brush over the edges of the tart
  • Place the tart on the lowest level of the oven for 40-50 min (until golden)
  • Take it out of the oven and sprinkle with some fresh thyme and a tbsp of Feta.
  • Let cool for 15 min before serving. Serve with some cool Greek yogurt.
