Lighter Layered Squash Casserole

- olive oil shopping list
- 3-4 large yellow squash (or zucchini), sliced longways shopping list
- 1/2 yellow onion, diced shopping list
- 2 large garlic cloves, minced shopping list
- salt and pepper to taste shopping list
- 4 ounces crumbled feta cheese (approximately) shopping list
- White cheddar, cut into small pieces (I cut up several slices into pieces) shopping list
- Approx 1/4 cup of fresh grated parmesan cheese shopping list
- Sprinkling of bread crumbs shopping list
- Small chips of butter shopping list
How to make it
- Drizzle oil on bottom of baking dish
- Spread one layer of sliced squash over oil
- Sprinkle with salt and pepper
- Sprinkle on feta cheese
- Top with onion and garlic
- Add another layer of squash
- Add layer of white cheddar pieces
- Sprinkle with freshly grated parmesan cheese
- Add as many layers of the veggie and cheese as you like, depending on how much you are wanting to make
- Top with thin layer of breadcrumbs
- Add chips of butter and a drizzle of olive oil to top
- Bake at 400 for 40 minutes, until brown and bubbly!
