Easy Pezy Tuna Cakes

- 425g Can of tuna in brine shopping list
- 1 brown onion diced shopping list
- 1 cup of shallots sliced shopping list
- 3 potatoes cooked and mashed shopping list
- Squeeze of lemon shopping list
- salt and pepper to season shopping list
- 2 Cups breadcrumbs shopping list
- 1/2 cup plain flour shopping list
- 2 eggs lightly beaten shopping list
- oil to fry shopping list
How to make it
- Cook and mash Potatoes
- Empty Can of tuna in bowl along with the mashed potatoe, onion, shallots and lemon.
- season with salt and pepper
- mix all well together, then with your hands form into patties (app 8)
- Refridgerate for 20 mins
- Beat the eggs in a bowl. Place flour and breadcrumbs in separate bowls. Dip each patty in the flour, then in the egg mixture and lastly in the breadcrumbs. Heat the oil in a heavy-based saucepan over medium-high heat. Add patties (in batches) and fry both sides until golden brown.
- Serve with a garden salad
