Rob’s Baked Salmon

- 2 cloves garlic, minced shopping list
- 1/3 cup olive oil shopping list
- 1 teaspoon dried basil shopping list
- 1/2-teaspoon salt shopping list
- 1 teaspoon ground black pepper shopping list
- 1/2 lemon juiced shopping list
- 1/4 cup fresh parsley, chopped shopping list
- 1/2 tomato chopped shopping list
- 1/2 onion chopped shopping list
- 1/2 green pepper chopped shopping list
- 2 (8-ounce) fillets salmon shopping list
How to make it
- 1. In a medium glass bowl, prepare marinade by mixing garlic, olive oil, basil, salt, pepper, lemon juice and parsley. Place salmon fillets in a medium gallon bag or bowl, and cover with the marinade. Marinate in the refrigerator about 1 hour or more, turning occasionally.
- 2. Preheat oven to 375 degrees F (190 degrees C).
- 3. Place fillets in aluminum foil (for the grill) or in a baking dish and cover with marinade, tomato, onion, green pepper and seal with aluminum foil. Place sealed salmon in the oven or place packet on the grill and bake 35 to 45 minutes, until easily flaked with a fork.
