Banana And Pistachio Fool

For the caramelised bananas
- 2 bananas, sliced shopping list
- 2 tbsp demerara sugar shopping list
For the fool
- 500ml/17fl oz whipping cream, whipped shopping list
- 250ml/8fl oz thick Greek-style yoghurt shopping list
- 1 vanilla pod, split, seeds scraped out shopping list
- 100g/3½oz icing sugar, sieved shopping list
- dash banana liqueur shopping list
- 200g/7oz unsalted pistachios, shells removed, lightly crushed shopping list
- 6 bananas, sliced shopping list
How to make it
- For the caramelised bananas, sprinkle the banana slices with the demerara sugar and use a mini blowtorch to caramelise the sugar.
- For the fool, combine the cream, yoghurt, vanilla seeds and icing sugar in a bowl to make a thick mousse-like mixture. Fold in the banana liqueur, the banana slices and half of the crushed pistachios.
- To serve, spoon the fool into sundae glasses and top with the rest of the nuts and the caramelised bananas.
