How to make it

  • For the caramelised bananas, sprinkle the banana slices with the demerara sugar and use a mini blowtorch to caramelise the sugar.
  • For the fool, combine the cream, yoghurt, vanilla seeds and icing sugar in a bowl to make a thick mousse-like mixture. Fold in the banana liqueur, the banana slices and half of the crushed pistachios.
  • To serve, spoon the fool into sundae glasses and top with the rest of the nuts and the caramelised bananas.
