Tomato Chicken Rice Soup

- 1 large onion, chopped shopping list
- 2 large green peppers, chopped shopping list
- 4 ribs celery, chopped shopping list
- 1 bunch green onions, chopped shopping list
- 3 tbsp minced garlic shopping list
- 2 quarts chicken stock (from a can or carton) shopping list
- 4 cups cooked brown rice shopping list
- 4 cups chicken breast, in 1" cubes shopping list
- 1 28 oz can diced italian style tomatoes shopping list
- 2 tbsp dried oregano shopping list
- 3 bay leaves shopping list
- 1 tsp salt shopping list
How to make it
- Cook the brown rice if not already cooked.
- Cook the chicken chunks in a small amount of water in a pan on the top of the stove.
- Place cooked chicken in a dutch oven or large soup pot and add all other ingredients.
- Bring to a boil and then simmer for 30 to 45 minutes to allow flavours to blend.
