How to make it

  • In pot cook rice to al dente. Remove from heat. Drain rice & cool.
  • Preheat oven to 400.
  • Beat eggs. Add sugar & vanilla. Add ricotta & beat till smooth. Stir in milk & cooled rice.
  • Pour into ungreased round cake pan. Sprinkle cinnamon on top.
  • Bake 50-55min.
  • Cool on rack.
  • Chill.

    This does sound different - although it's somewhat like (minus the ricotta) the old southern type rice pudding that my dad loved. It really piques my interest, thanks so much for a great post!
