How to make it

  • Placing the milk,cream,vanilla,sugar,and fennel in saucepan over medium heat stirring all the while,and cook for a few minutes until the sugar dissolves and the milk is just about to boil.Remove from heat.
  • Whisk the egg yolks and honey,then whisk in 1/4 cup of the hot miik mixture until smooth.Whisk in the remaining milk,then return to a clean saucepan,stirring all the while and heat for about 8 to 10 minutes or until the mixture thickens and coats the back of a spoon.
  • Do not allow to boil.
  • Remove from heat and whisk in the chestnut puree.
  • Cool slightly,then cover and refrigerate until cold.
  • Transfer to an ice cream maker and freeze.
