Peach Bread Pudding Trifle

- 4 ripe peaches pitted ( skin on ) shopping list
- 2 eggs shopping list
- 1/2 cup olive oil or vege oil shopping list
- 2 Tbs honey shopping list
- 2 cups flour shopping list
- 1 cup sugar shopping list
- 1 pinch salt shopping list
- 1 tsp baking soda shopping list
- 2 tsp baking powder shopping list
- 1 tsp vanilla shopping list
- 1 lg container whipped topping shopping list
- 1 pint blueberries shopping list
How to make it
- Place peaces in a blender
- with eggs, oil,and honey
- Process into a puree
- Add flour, sugar, salt, baking powder, soda and
- vanilla
- Blender smooth, stop to scrape
- down sides
- Divide batter into 2, 8 x 4 greased laof pans
- Bake 350 about 45 minutes until tested with toothpick
- and moist crumbs attached
- Cool 10 minutes and remove from pan
- This pudding like cake loaf may fall( okay )
- let cool
- Assemble trifle
- Cut each loaf vertically a few times and then cut strip into small
- pieces
- Place a layer on bottom of a serving bowl or glass dish
- Add some blueberries. Repeat layers. Add the whipped topping or whipped cream and gently fold in
- Garnish with mint leaves and more blueberries on top
- Serve warm or chilled
