How to make it

  • In a large mixing bowl, combine the flour and sugar.
  • Cut in the butter until the mixture resembles fine crumbs.
  • Knead the dough until smooth, about 6-10 minutes.
  • Pat into an ungreased 15 x 10 inch baking pan.
  • Pierce with a fork.
  • Bake at 325 for 25-35 minutes or until lightly browned.
  • Cut into squares while warm.
  • Cool on a wire rack.

    Joy! Truly classic! My grandmother taught me this recipe, specifying golden-brown sugar. If you leave it 90 seconds too long in the oven, it's butterscotch-y -- which is not necessarily a bad thing!. I have relatives who ask me every year if there is any chance of shortbread (unfortunately, I get a lot of November-December respiratory infections, so I haven't made any in several years. Maybe this year, but for Hogmanay rather than Christmas,)
