Lemon-balsamic Chickpea Spinach Salad

- 2 cups small cauliflower florets shopping list
- 1 can chickpeas, drained and rinsed (big can, little can - you decide...) shopping list
- 1 small zucchini, chopped shopping list
- 2 scallions, chopped shopping list
- 2 tbsp. sun-dried tomatoes, minced shopping list
- 2 tbsp. fresh basil, chopped shopping list
- 1 clove garlic, minced (or 2-3 cloves roasted garlic) shopping list
- 1 tsp, Italian (or Greek) seasoning shopping list
- salt & pepper shopping list
- 1/4 tsp red pepper flakes shopping list
- 3 tbsp lemon juice shopping list
- 1 tbsp balsamic vinegar shopping list
- 1.4 cup olive oil shopping list
- 9 oz. baby spinach shopping list
- 1/2 cup feta cheese shopping list
How to make it
- Combine cauliflower, chickpeas, zucchini and scallions in a large bowl.
- In separate bowl, whisk together lemon juice, vinegar, olive oil, sundried tomatoes, basil and seasonings. Pour over vegetable mixture.
- Toss with spinach and feta cheese before serving.
