How to make it

  • Cook chicken breasts and dice - set aside
  • Chop onion & bell pepper
  • Combine flour and oil in medium sized pot - cook on med/hi heat until rich brown, stirring frequently
  • Add the onion and bell pepper - cook on med heat about 10 min.
  • Add diced chicken, chicken broth, tomatoes, seasonings
  • Bring to a boil, cover and simmer at least 45 min
  • Increase heat to med/hi setting, uncover and boil for about 10 min - this will thicken the gumbo
  • Serve over white rice
  • You can add whatever vegetable you like. Sometimes I add okra and shrimp. Wait until almost done before adding shrimp.
