How to make it

  • In a large pot or dutch oven, fry bacon over medium to medium high heat. When bacon is almost crispy, reserving 2 Tbsp in the pan, drain rest of fat.
  • Add onions and mushrooms, salt and pepper to taste (a generous pinch of each is about right) then saute until onions are soft.
  • Add tomatoes, broth, and next 7 ingredients. Bring to a boil, turn heat down and let simmer 15 minutes. (if using a crockpot, turn heat off, leaving pot on burner, then proceed to next step)
  • Add chili beans and sauce, drained kidney and black beans, and simmer at least 30 mins. (crockpot method: spray inside of crockpot with pan spray, omit simmer time, transfer to crockpot on low setting for 3-4 hours)
