Bacon And Mushroom Chili

- 1/2 pkg bacon, chopped shopping list
- 1/2 small onion diced shopping list
- 1 container mushrooms, quartered or sliced shopping list
- salt & pepper shopping list
- 1 can rotel tomates shopping list
- 4 cups chicken broth shopping list
- 2 chicken bouillon cubes shopping list
- 2 tbsp brown sugar shopping list
- 1 tbsp Dijon mustard shopping list
- 1 tsp prepared horseradish shopping list
- 1 1/2 tsp parsley shopping list
- 1 tsp cilantro shopping list
- 1-2 tsp chili powder, to taste shopping list
- 2 cans black beans, drained and rinsed shopping list
- 1 can kidney beans, drained and rinsed shopping list
- 1 can chili beans in sauce, undrained shopping list
How to make it
- In a large pot or dutch oven, fry bacon over medium to medium high heat. When bacon is almost crispy, reserving 2 Tbsp in the pan, drain rest of fat.
- Add onions and mushrooms, salt and pepper to taste (a generous pinch of each is about right) then saute until onions are soft.
- Add tomatoes, broth, and next 7 ingredients. Bring to a boil, turn heat down and let simmer 15 minutes. (if using a crockpot, turn heat off, leaving pot on burner, then proceed to next step)
- Add chili beans and sauce, drained kidney and black beans, and simmer at least 30 mins. (crockpot method: spray inside of crockpot with pan spray, omit simmer time, transfer to crockpot on low setting for 3-4 hours)
