    Most (but not all) Middle Eastern and Mediterranean 'cookbooks' contain a FEW cliche recipes with a LOT of nostalgic and tiresome ramblings about trips to Greek Islands and villages etc. I don't use them. The only ones I use are Larousse Gastronomique, Escoffier's Guide Culinaire etc. for reference, or cookbooks by master chefs for inspiration.
    This recipe is certainly not original, they been making it since Abraham, Isaac and Jacob's days. How many variations could there be with two main ingredients? If this recipe appears in a Middle Eastern cookbook, and I'll bet it does in at least 3 or 4, then they have a good recipe!
