How to make it

  • Soak chicken in buttermilk for 30-45 minutes.
  • Preheat oven to 400 Deg.
  • Combine corn meal, garlic, salt, pepper and paprika
  • Coat chicken nuggets in corn meal mixture and place in single layer on baking sheet.
  • Bake for approx 20 minutes, turning once halfway through for 15-20 minutes until cooked through and crispy.
  • If you wish to freeze and reheat nuggets, freeze them in a single layer on a sheet pan and then place in large freezer bag. To reheat, preheat oven to 400 deg and bake for 10-15 mins until heated through.

    If your like us, it's always hard to find things our 5 and 7 year old want to eat. If this works for your 2 year old, then I have to try it out. And when you buy them in a restaurant or grocery store, it seems like 6 nuggets cost as much as a whole chicken!
