Navy Beans With Tomatoes And Spinach

- 1 can navy beans, rinsed shopping list
- 1 small cooking onion shopping list
- 2-4 cloves garlic, crushed shopping list
- 1 28oz tin organic plum tomatoes or, shopping list
- chopped fresh about 2 cups shopping list
- ½ tsp basil shopping list
- ½ tsp oregano shopping list
- ½ tsp ground coriander shopping list
- 6 cups spinach, rinsed well shopping list
- ½ cup vegetable broth shopping list
- sea salt & pepper to taste shopping list
- parmesan cheese shopping list
How to make it
- Saute 1 small onion, finely chopped in 1 tblsp olive oil about 3 minutes. Add garlic sauté 1-2 min.
- Stir in spices sauté momentarily,
- Add tomatoes and sauté until they begin to soften, simmer 5 min
- stir in beans, broth and herbs simmer 5 minutes.
- Add spinach, cover cook just until spinach wilted.
- Garnish with freshly grated parmesan cheese.
- Delicious as a side or main dish.
