How to make it

  • 1. Food process the almonds 3/4 C. coconut, agave, coconut butter, vanilla and sea salt.
  • 2. Stir in the remaining coconut.
  • 3. Roll this dough into balls.
  • 4. Roll each ball in additional coconut until coated. Alternatively, you could also mix crushed almonds with the coconut.
  • 5. Refrigerate until set.

    I usually don't like coconut but these things are amazing. I'm about to form the "dough" into balls now but I think it would be wise to stuff my face before I go near the dough again!
