How to make it

  • scoop out the inside of the portabello mushrooms
  • grill in pan on both sides till moisture in mushroom is evaporated (i use a grill pan)
  • remove from pan and layer each mushroom with 1/4 cup spinach dip
  • spoon 1/4 cup marinara sauce on top
  • crumble fresh mozzerella on top
  • drizzle with olive oil
  • bake 350 degrees in shallow pan for 15 to 20 min or untill top is golden and bubbly
  • remove from oven
  • grate parmesean and fresh black pepper on top
  • serve

    This sounds like a nice new way to stuff mushrooms. Spiniach dip is always a big hit at our house.
