Fruited Roast Chicken

- 1 broiler/fryer chicken, approximately 3-4 pounds shopping list
- 2 tablespoons Madras curry powder shopping list
- vegetable cooking spray shopping list
- 1/2 cup mango chutney shopping list
- 1/4 cup fresh lime juice shopping list
- 3/4 cup coarsely chopped apple shopping list
- 3/4 cup coarsely chopped pear shopping list
- 3/4 cup coarsely chopped peeled kiwifruit shopping list
- 3/4 cup cranberries shopping list
How to make it
- Remove and discard giblets from chicken, rinse chicken under cold water and pat dry. Remove skin and trim excess fat and quarter the chicken.
- Rub each quarter chicken with curry powder and place quarters, meaty side up, in a shallow roasting pan coated with cooking spray.
- Bake at 450 F for 25 minutes.
- Combine chutney and lime juice and stir well.
- Reduce heat to 350 F and brush chutney mixture over chicken quarters. Bake 25 minutes.
- Arrange apple, pear, kiwifruit and cranberries around chicken quarters and bake an additional 10 minutes or until juices run clear.
- Serve each 1/4 chicken with 3/4 cup of fruit on a plate.
