How to make it

  • Remove and discard giblets from chicken, rinse chicken under cold water and pat dry. Remove skin and trim excess fat and quarter the chicken.
  • Rub each quarter chicken with curry powder and place quarters, meaty side up, in a shallow roasting pan coated with cooking spray.
  • Bake at 450 F for 25 minutes.
  • Combine chutney and lime juice and stir well.
  • Reduce heat to 350 F and brush chutney mixture over chicken quarters. Bake 25 minutes.
  • Arrange apple, pear, kiwifruit and cranberries around chicken quarters and bake an additional 10 minutes or until juices run clear.
  • Serve each 1/4 chicken with 3/4 cup of fruit on a plate.
