How to make it

  • saute the onions and pepper in some olive oil/butter till softened and just starting to brown, Add the scallops and cook and stir till cooked through ( 5 minutes or so ) salt and pepper to taste. Add the sherry
  • Add enough sauce to cover scallops and cook and stir to heat sauce,
  • Serve this as is over over a pasta or grain if desired.
  • Garnish with fresh chopped basil or parsley for a little color
