Pomegranate Pilaf

- 2 Tbs butter shopping list
- 1/2 cup diced red onion shopping list
- 1 cup jasmine or basmati rice shopping list
- 1 1/2 cups chicken stock shopping list
- 1/2 cup dried apricots shopping list
- 1/2 cup chopped almonds shopping list
- 1/2 cup pomegranate ariels ( seeds ) shopping list
- 1 tbs fresh thyme leaves shopping list
- salt and pepper to taste shopping list
How to make it
- Cook onion in a sauce pan with the butter, about 4 minutes until softened
- . add th rice and cook about a minute till rice is coated
- Add the stock
- bring to a boil
- Cover and reduce heat to low
- Cook until liquid is absorbed, about 20 minutes
- Fluff with a fork
- Stir in almonds, pomegrante ariels and apricots
- Add thyme and season to taste
