Parsley & Lemon Crusted Haddock

- 4 slices of haddock<or any white fish> shopping list
- 100g <1 cup> Dried breadcrumbs shopping list
- zest of 1 lemon shopping list
- 3 tsp parsley shopping list
- 4 large tomatoes sliced thickly shopping list
- 1 onion sliced shopping list
- 1 tbsp balsamic vinegar shopping list
- 1 tbsp olive oil shopping list
How to make it
- Heat the oven to 200c <392f>. In a bowl combined the tomato and onion with the balsamic vinegar and oil season to taste. Lay them on the bottom of an oven dish and roast for 10min. Whilst it is cooking combined the breadcrumbs lemon zest and parsley top each piece of fish with mixture and a drizzle of olive oil. Place the fish on top of the tomato and onion and cook for a further 15mins.
