Gin & Tonic Sorbet

- 175g-6oz caster sugar shopping list
- 450ml-3/4 pint tonic water shopping list
- 6 Table spoons gin shopping list
- juice and zest of 2 limes shopping list
- 450ml - 3/4 pint water shopping list
How to make it
- 1. Dissolve the sugar in a pan with the ¾Pint water over a moderate heat stirring constantly.
- Add lime juice and zest and boil for 5 mins or until the mixture reaches 110°C - 225°F
- Leave to cool then strain.
- 2. Stir tonic water & Gin into the lime mixture
- pour into a freezer proof dish and freeze until slushy.
- Beat then freeze again, repeat process then freeze until set
- Remove from freezer 10 mins before serving.
- Decorate with slices of lime and mint sprigs serve in sundae glasses
