How to make it

  • 1. Dissolve the sugar in a pan with the ¾Pint water over a moderate heat stirring constantly.
  • Add lime juice and zest and boil for 5 mins or until the mixture reaches 110°C - 225°F
  • Leave to cool then strain.
  • 2. Stir tonic water & Gin into the lime mixture
  • pour into a freezer proof dish and freeze until slushy.
  • Beat then freeze again, repeat process then freeze until set
  • Remove from freezer 10 mins before serving.
  • Decorate with slices of lime and mint sprigs serve in sundae glasses
