Mojito Shrimp

- 1 1/2 pounds shrimp, peeled and deveined, tails on shopping list
- 5 tablespoons lime juice, divided shopping list
- 20 mint leaves shopping list
- 1/3 cup sugar shopping list
- 1 shallot, thinly sliced shopping list
- 1/3 cup light rum shopping list
- 1 tablespoon vegetable oil shopping list
- 1 teaspoon lime zest shopping list
- 1 teaspoon salt shopping list
How to make it
- Make mojito marinade by combining mint leaves, sugar and shallot in a medium bowl. Pound with a wooden spoon to crush.
- Whisk in rum, 3 tbsp of lime juice, oil, lime zest and salt until salt dissolves.
- Heat grill to high heat. Place shrimp in a large ziploc bag with marinade for 15-20 minutes (no longer).
- Thread shrimp onto skewers and arrange on grill, basting with marinade. Close lid and cook 1-2 minutes until shrimp begin to brown.
- Turn shrimp, baste again and cook 1-2 minutes more. Transfer to platter, drizzle with lime juice and garnish with mint sprigs to serve.
