How to make it

  • Make mojito marinade by combining mint leaves, sugar and shallot in a medium bowl. Pound with a wooden spoon to crush.
  • Whisk in rum, 3 tbsp of lime juice, oil, lime zest and salt until salt dissolves.
  • Heat grill to high heat. Place shrimp in a large ziploc bag with marinade for 15-20 minutes (no longer).
  • Thread shrimp onto skewers and arrange on grill, basting with marinade. Close lid and cook 1-2 minutes until shrimp begin to brown.
  • Turn shrimp, baste again and cook 1-2 minutes more. Transfer to platter, drizzle with lime juice and garnish with mint sprigs to serve.
