Fruit-nut Pumpkin Bread

- 2-2/3 c sugar shopping list
- 1 can(15 oz )pumpkin shopping list
- 1 c canola oil shopping list
- 4 eggs shopping list
- 1 tsp vanilla shopping list
- 3-1/2 c flour shopping list
- 1-1/2 tsp ground cinnamon shopping list
- 1 tsp salt shopping list
- 1 tsp baking soda shopping list
- 1/4 tsp ground cloves shopping list
- 1-1/2 c coarse chopped walnuts shopping list
- 2/3 c golden raisins shopping list
- 2/3 c raisins shopping list
- 2/3 c dried cranberries shopping list
- Cranberry cream cheese spread shopping list
- 1/2 c dried cranberries shopping list
- 1-1/2 c boiling water shopping list
- 1 pkg (8oz) crean cheese,softened shopping list
- 1/3 c chopped walnuts shopping list
How to make it
- In large bowl,beat sugar,pumpkin,oil,eggs and vanilla till well blended. Combine the flour,cinnamon,saltbaking soda and cloves;gradually beat into pumpkin mixture until blended. Fold in walnuts,raisins,and cranberries.
- Transfer to 2 greased 9x5" loaf pans. Bake at 350' for 60-70 mins or till toothpick inserted near center comes out clean. Cool 10 mins before removing from pans to wire racks.
- For spread,place cranberries in a small bowl;add boiling water. Let stand for 5 mins;drain. In small bowl,beat cream cheese until smooth. Beat in cranberries and walnuts until blended. Serve with bread.
