Six-week Muffins

- 15 oz box raisin bran shopping list
- 1 c shortening, melted shopping list
- 3 c sugar shopping list
- 4 eggs, beaten shopping list
- 1 qt buttermilk shopping list
- 5 c flour shopping list
- 5 tsp baking soda shopping list
- 2 tsp salt shopping list
How to make it
- Mix raisin bran, flour, sugar, and salt in a VERY large mixing bowl. (This is a very large recipe, be sure the bowl can be covered tightly). Add eggs, shortening and buttermilk. Mix well. Store in covered container in refrigerator. Refrigerate 1 day before using.
- To Bake: DO NOT STIR BATTER!! Just fill greased muffin tins 2/3 full. Bake in preheated oven 400 for 15-20 minutes. (I put a little water in the unused muffin sections in the pan.)

Outstanding muffin recipe and very easy to make. I always reduce the sugar in recipes and did on this one too. Used only 1 1/4 cup of sugar and the muffins still tasted great. Not sweet and sugary ... just a good ole Raisin Bran muffin!
