Raisin Bran Muffins

    I had a box of Raisin Bran cereal that my DH bought but had no intention of eating so I thought to myself ... self, make some muffins. I had all the ingredients for this recipe too so it was a given. The recipe is noted several times on this site and it is very good and very easy to make. I significantly reduced the sugar too (only used 1 1/4 c.) and they are still great!!

    Hmmm...just noticed that some of the recipes say the batter keeps 3 weeks in the fridge and others say 6 weeks.

    I made the full amount because I wanted to use the box of cereal up. I make jumbo muffins and even though I'm not a big fan of raisins I do like them in some things. I believe the original recipe that's out there says 6 weeks but someone changed it to 3.
    I'm sure if you got bran flakes Bakerme they would work just fine and if you want add your own chopped up dried fruit.

    Taste your batter and add sugar to your taste. Bran flakes won't be as sweet as Raisin Bran cereal so you may prefer more sugar than the cup and a quarter I used.

    At the Bakery we kept our banana bread batter and many other muffin type batters in the walk-in fridge. It probably never lasted more than a week before baking it though. But as long as it's in an air tight container in the coldest part of the fridge it would last at least 3 weeks, probably 6 with this recipe since it has shortening and buttermilk. :)
