A great cookie in the soft cookie style
Ingredients

- egg whites from 5 lg eggs shopping list
- 4 cups sifted powdered sugar shopping list
- 4 Tbsp cocoa powder shopping list
- Pinch of salt shopping list
- 1 tsp vanilla shopping list
- 4 - 1/3 cups pecans, chopped small pieces shopping list
How to make it
- Directions:
- In a large bowl, measure all dry ingredients.
- Whip the egg whites until light forth. Do not mix dry!
- Add dry ingredients and vanilla to the egg whites and mix well.
- Drop out on silicone paper with #60 ice cream scoop or with a tablespoon make a mound.
- Bake at 370 degrees for 12-13 minutes. Do not over bake. When cookies come off the silicone paper, they are done.
- Cookie should be crunchy on the outside and chewy (soft) on the inside.
- Yield: Approximately 6 dz cookies
