How to make it

  • Cut the mushrooms into quarters. Saute w/ the bacon and baby onions.
  • Flour the veal chops; then saute them in butter for 5 min. on each side, until they are well-browned.
  • Add the mushroom mixture, and deglaze the pan w/ the Madeira, cook as medium heat over 1 hour.
  • Stir in the cream. Cook gently for an additional 10 min. and season. Serve immediately.
