How to make it

  • Position 1 rack in center and one rack in lower third of oven;preheat to 350' Combine cumin,pumpkin pie spice,salt,garlic powder and pepper. Rub 1 TB oil and half of spice mixture over chicken.Place in large roasting pan.
  • Toss potatoes and lemons with remaining 2 TB oil and spice mixture. Place on jelly roll pan. Roast chicken on center rack until no longer pink near bones,about 45 mins.
  • Roat potatoes on lower rack until tender,45 mins,adding olives during last 5 mins.
  • Preheat broiler. Brush chicken with jelly. Broil till browned 3 mins.
  • Serve chicken with potato mixture.

    This sounds delicious. It is a great idea to use pumpkin pie spice combined with cumin to get a Moroccan flavor. And this looks so easy to make. Great idea, P!
