How to make it

  • clean beets , leave skin on, place in a pot with cut up leek
  • Cover to top of veges with water and bring to a boil.
  • Lower heat to a simmer. cover and cook till beats tender, about30 - 45 minutes
  • Remove beets with a slotted spoon
  • rinse under cool running water and slip off skin
  • Place beets back in pot and use a hand blender to puree mixture or puree beets with liquid and leeks in a blender
  • Season to taste.
  • Lastly stir in enough heavy cream to make creamy
  • Serve either warm,hot or chilled
  • Garnish with chopped chives or sour cream

    Nummy... really love beets because the entire plant (excluding the peel, of course) can be used. When I planted beets, I obtained several cuttings of the greens before harvesting the roots. Now how efficient is that??? ;-)
