Creamy Beet And Leek Soup

- 1 small bunch of beets, cleaned shopping list
- 1 small leek cleaned shopping list
- heavy cream as needed shopping list
- salt, pepper, to taste shopping list
- dash of celery seed to taste shopping list
- 1 to 2 tsp sugar ( or Splenda ) as desired shopping list
- dash of worcestershire sauce shopping list
How to make it
- clean beets , leave skin on, place in a pot with cut up leek
- Cover to top of veges with water and bring to a boil.
- Lower heat to a simmer. cover and cook till beats tender, about30 - 45 minutes
- Remove beets with a slotted spoon
- rinse under cool running water and slip off skin
- Place beets back in pot and use a hand blender to puree mixture or puree beets with liquid and leeks in a blender
- Season to taste.
- Lastly stir in enough heavy cream to make creamy
- Serve either warm,hot or chilled
- Garnish with chopped chives or sour cream
