How to make it

  • wrap desired soaked wood chip in heavy aluminum foil
  • poke holes in foil
  • place chips on bbq at medium heat.close lid and let sit 5 minutes, meanwhile,
  • sprinkle trout pieces with herbs and spices
  • in metal fish or veggie basket, clamp fish on
  • place on grill
  • close lid and lower heat to low
  • turn every 3 to four minutes till fish flakes easy
  • remove from bbq
  • let sit 2 minutes
  • remove from grill basket
  • garnish with quartered lemon wedges
