How to make it

  • oven 350 degrees greased 9 x 13 pan
  • beat sugar, oil, eggs & vanilla until smooth
  • sift flour,salt, baking powder,cinnamon, & nutmeg. Slowly add to egg mixture. blend well.
  • stir in pecans, raisins, tomatos.
  • put into pan. top with coconut, if desired.
  • Bake 45 min until toothpick comes out clean.
  • The directions call for baking 60 min, but several reviews felt this was too long.

    This is a classic favourite of my family's! We bump up the whole "fall" thing with ours though with pumpkin puree, brown sugar, cloves and nutmeg. It is so good, you'd never guess it had tomatoes!
