How to make it

  • Take the skin off the pear, of course and leave it whole with stalk intact so it looks pretty. Put the cinnamon stick, cloves, nutmeg, star anise, wine, and brown sugar in a medium saucepan over medium heat. Cook for 2 minutes or until the sugar dissolves. Throw in the pears and bring to the boil. Reduce heat to low and simmer. Spoon the wine over the pears now and then. Simmer for 1 hour or until pears are tender but not soggy. Turn on the fire bring the syrup to boil. Cook, for about 10 minutes or until syrup thickens slightly. Pour syrup over the pears and let coole for 10 mins. Put in a container and place in the fridge to chill for 3 to 4 hours before serving. It is best served with vanilla ice cream.
